About Earth in the Cosmere

Hello. I am afraid you are mistaken; the line in Elantris is: "It had come with a tempest—that much even Raoden remembered. The earth itself had shattered." The capitalization of the word earth in that matters, so clearly this line is just generically using "earth" for "the ground." This is not really that uncommon a turn of phrase. You are also mistaken, and there is very consistent evidence for the fact that the planet Earth is not in the cosmere. See on Arcanum for many many quotes on this: [1]

If Earth didn't exist there would be no use for the word in the universe, period. Earth being used in the generic sense of "ground" etc... shouldn't exist in a Universe that has no Earth. Just saying. Mistake or otherwise, Earth/earth exists.
I'm sorry, this is fairly common in fantasy. Realize we are all reading the books in translation, rather than the native Selish tongue. You're welcome to disagree, but professional editors of novels would disagree with your assessment. If you look at the definition of the word "earth", this is valid. To add to that, by your logic, any magic with classical elements can't use the word "earth," or have spells named "earthquake." This is extremely, extremely common to use the word in this way.
